Truffle on truffle on truffle! Truffle and porcini mushroom ravioli topped with wilted arugula, sliced almonds, parmesan cheese, and black truffle sauce. Oh Em G! HOLD UP – What if I told you this meal took me a whole 5 mins to make?? YES! One of my favorite go to meals when i’m running short on time but still want something damn delicious. Two words – Trader Joes!
Pillowy triangles stuffed with porcini mushrooms, shaved truffles, and ricotta. You can buy this deliciousness at TJs! You will find them in the fresh foods section near all the hummus/dips. The best part is that these little suckers only take 3 minutes to make and then all you need to do add your toppings (arugula, part, truffle sauce, sliced almonds). I’m all about fresh homemade pasta but let’s face it people, life has a way of keeping us all busy and ain’t nobody got time for dat! When life gets crazy, delicious shortcuts like this are the way to go. The combination of arugula, truffle, and parmesan make this a true winner in my book of delicious quick fix meals.
Ok so can we talk about truffle sauce?????!! Some of you may be wondering what this stuff is and those of you who own it already know it’s basically amazing! I purchased my first truffle sauce on at trip to New York City at the ever famous Eataly! If you like truffle this stuff is going to rock your world because it’s even stronger than truffle oil and truffle salt. I use it on everything from eggs to pasta to grits when ever I need my truffle fix. Side note, if you haven’t been to Eataly, please please please put it on your itinerary next time you are in NYC. All the best Italian food under one roof…NOMZ!
- 1 package Trader Joes Truffle and Porcini Mushroom Triangoli Pasta
- ½ bag of Trader Joes Wild Rocket Arugula
- ¼ cup sliced almonds
- ½ cup parmesan
- black truffle sauce (optional)
- Prepare ravioli pasta according to package instructions.
- Saute arugula in a small amount of olive oil for a minute or two until wilted.
- Top pasta with wilted arugula.
- Top arugula with parmesan cheese, sliced almonds and a few drops of black truffle sauce (optional)
