Fancy toast! On a Tuesday 🙂 Nothing says spring like the color pink. That’s why i’m so excited to slather beet hummus over everything at the moment. I made it a few days ago and it seriously rocked my world! You can find the recipe for it here. As I have mentioned before, beet hummus was a life changer for me. The combo of beets and hummus not only make a beautifully colored dip, but also a unique flavor that is sure to be a hit with beet lovers and non-beet lovers everywhere. Besides eating it by the spoonful (opps!), one way you can use beet hummus is on toast. Just grill a few pieces of french bread, slap on a spoon or two of hummus, arugula, crumbled goat cheese, and finally drizzle with some fig balsamic or any simple balsamic you have laying around the house.
These make great cocktail party appetizers. Your guests will be so distracted by sight of these bright pink beauties that they won’t even realize they are eating something healthy. Win-win sitch (yay!).
