BEET it old man winter, Spring is officially here! ???? Pull out your shades for this one ????. Beet Hummus!! This stuff is seriously amazing and I’m officially addicted. For all you beet haters, you will also like this because it doesn’t even taste like beets! Between all the garlic and lemon, you won’t even know it’s in there.
This post was inspired by my pal Lindsay at The Fit Fork Feed who uses pickled black pepper beets to make hummus. All you need for my version is chickpeas, cooked beets, garlic, black pepper, salt, lemon juice and olive oil. I always make hummus using my Cuisinart smart stick which is quickly becoming one of my favorite kitchen appliances!
- 1 can chickpeas
- ¼ cup cooked beets
- 2 cloves garlic
- 1 tsp salt
- ¼ cup olive oil
- Juice of half a lemon
- Blend all ingredients in a food processor.
- Remove hummus into a bowl.
- Top with pumpkin seeds and serve.
- Served best when chilled.
