Guys i’m really really excited about this one! Roasted Delicata squash topped with goat cheese and pumpkin seeds, then drizzled with jalapeño yogurt sauce and topped of with a sprinkle of parsley. Wow!! I’m currently obsessed with Delicata squash right now and just love that the skin is edible! That’s right…that means…no peeling! Just cut open, remove seeds, chop up and roast at 425 degrees for about 25 minutes until crispy. Muy bien!
The toppings make this recipe ON POINT! Pumpkin seed and goat cheese go perfectly with the AMAZING jalapeño yogurt sauce from Trader Joes. I put this yogurt sauce on seriously everything! It’s one pre-made purchase that I actually don’t mind paying the the $3-$4 for. Get out there and pick up some delicata squash today!
