Once you go purple, you never go back! I checked out the grand opening of Whole Foods Market in Pentagon City today and found myself delighted to find finally find purple cauliflower! I was one happy girl. Purple cauliflower is a rare gem that I can’t seem to find very often so you better bet your bottom dollar I snatched up the last few bunches that I found!
In my opinion, simple is best when it comes to cauliflower. Which is why I’m ALL about roasting. Something magical happens between the time you throw that tray of raw florets in the oven to the time you pull out that beautiful, crispy, golden roasted bounty. Even with no seasoning at all, I could eat a whole tray of roasted cauliflower in minutes. Just spread your cauliflower pieces on baking sheet, drizzle with a little olive oil and you are good to go! Roast in the oven for about 30 minutes until crispy.
That beautiful purple bounty turned into something pretty magical! Roasted cauliflower and mushroom tacos topped with fresh corn, cotija, and pea shoots. ‘Nuf said!
