Every time I open up the fridge this week I see a HUGE bunch of watercress that I picked up from the farmers market last weekend. I must say that there is something to be said about farmers market produce. I have had this watercress for about a week now and honestly just can’t believe how fresh and vibrant it still is! 95% of the time that I find watercress at the grocery store about half of it is already limp and wilting which makes it so unappealing to stick in my cart let alone in my mouth! This fantastic beauty of a bunch however has lasted me forever so I will be heading all the way back to Maryland to get my produce again. Geez, the things I do for good veggies!
On to the salad. So the most exciting part about this salad is not the watercress, but THE DRESSING!! I have always been a sucker for a good Asian dressing but this one is SO amazing folks! The combination of sesame oil, lemon juice, garlic, tamari, honey, and crushed red pepper is so simple yet such a powerful flavor bomb! I love this dressing because you can literally throw it together in minutes and you likely already have most of the ingredients on hand. If you don’t already own a bottle of sesame oil and tamari please, please, please go buy them because they will make your life complete. Plus I use both in recipes (along with Sriracha) ALLLLL the time.
Finally, no salad is complete without a sprinkle of my favorite topping: hemp seeds. You guys know I sprinkle this stuff on just about everything. Hemp seeds are key to life!
- ½ cup fresh lemon juice
- 2 cloves garlic
- 2 Tbs sesame oil
- 2 Tbs tamari (or soy sauce)
- 2 Tbs honey
- 2 Tbs crushed red pepper flakes
- pinch of salt (to taste)
- 1 large bunch watercress
- Hemp seeds (optional topping)
- Add all dressing ingredients to a mason jar (or any jar with a lid)
- Seal jar with lid and shake, shake, shake!
- Pour dressing over salad
- Sprinkle with hemp seeds
