Spicy egg salad toast loaded with hemp hearts and baby arugula. I could eat this ALL day errrrray day. Breakfast, lunch and dinner! This ain’t no average egg salad sandwich folks. We be fancy today!
Okay, not really. Actually more like lazy, haha! I must fully admit that I was craving some good egg salad but really didn’t feel like dealing with boiling and peeling eggs on Monday. Ain’t nobody got time for dat! I’m not normally a prepared foods fan, especially when it comes to anything eggy. However, I must say that Whole Foods does sell a mean egg salad! It’s always fresh, consistent and SUCH a time save when it comes to a party of one.
You might be asking what the heck are hemp hearts?? Hemp hearts my friends are just another fancy term for good old raw shelled hemp seeds. You should make them your best friends. Seriously. Like the ever famous chia seeds, hemp hearts contain a ton of those healthy omega3 fats and are high plant based protein. All of that good stuff in such tiny little critters! Unlike chia seeds, however you don’t have to soak them in liquid to enjoy them. You can eat these straight up raw by the handful! I love the the nutty flavor of hemp hearts and add them to almost any savor dish I can think of. They add a little more nutrition and crunch to every little bite.
So back to the toast…yes! I’m a big fan of sprouted grain breads like Ezekiel these days but you can use any bread of your choice and top it with egg salad mixed with a little cayenne pepper, hemp hearts, and last but not least arugula. As you can tell arugula is one of my favorite greens these days because its slightly peppery taste. This time I tried baby arugula first time and love it! Hope everyone is having a good start to the week. I have busy one ahead of me but looking forward to Cinco De Mayo on Thursday!
