Things are cooling down outside but I’m already feeling a little summertime sadness because I’m going to miss ALL the avocados! Allow me to introduce you to my favorite 5-minute meal of the summer. Cherry tomato, goat cheese, and fresh corn stuffed avocados drizzled with my favorite tangy sesame vinaigrette. Plus you know I gotta have my pea shoots!
I’m not kidding when I tell you that I’ve had these babies for breakfast, lunch, and dinner practically all summer long! Don’t ask me why I’m waiting until the end of summer to share it with you 🙂 Just be glad that I finally did!
