There is nothing that makes me happier than pizza! But then again have you ever really met anyone that doesn’t love pizza? I’m talking ALL kinds. Deep dish, Sicilian, Neopolitan, New York Style, Brick Oven, you name it! Although I’m pizza obsessed, I’m definitely no pizza snob and will pretty much eat anything you put in front of me. I am however very adventurous when it comes to ordering pizza off a menu and therefore no one ever wants to share a pizza with me (meh!). I am always THAT girl that will order the most random, wild and crazy pizza on the menu and when it gets to our table everyone (making faces of course) is either like “wtf is that THAT?” or “whoa, I wish I ordered that!” Regardless, they all try it and end up liking it. My response (in my head) is always “Told ya so!”. So if we ever go out and you are excited to share a pizza with me, you know we are going to be best friends 🙂
Well now that you know about my ultimate love for wild and crazy pizza combos, let me introduce you to my new favorite fall pizza. Sweet Potato and Kale Naan Pizza! Let’s be honest, making your own pizza crust can be a big pain in the butt. Especially when you are all about the hustle and bustle and don’t always have time like me. That is why I am always looking for quick fix pizza crust alternatives.
My favorite new discovery is Stonefire Tandoor Baked Garlic Naan. They have a few different varieties but I particularly love the garlic version because I’m a garlic fiend. It’s amazing guys! All you have to do is grill it on the stove or bake in the oven for a few minutes and you are done! Skip all the kneading, rising, and waiting around because this product saves you all the hassle.
Moving on to the best part, toppings! This is where I get wild and crazy because that’s what life is all about. The Sweet potato and kale combo is one of my number one go tos when it comes to healthy eating so obviously they were going to make it onto a pizza one day. The natural creaminess and robust flavors loaded in this sweet potato topping make you forget about all the loads and loads of cheese that normally take over a pizza. Instead, it’s topped with goat cheese and sprinkled with walnuts for that hint of crunch. This pizza is by far one of my new favorite go-to recipes this fall so I think you should try it too. - 2 large sweet potato (cooked)
- 4 cups steamed kale
- 2 Tbs cream cheese
- 1 cup goat cheese
- ½ cup walnuts
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp cayenne pepper or smoked paprika (optional)
- 1 package Stonefire Tandoori Baked Garlic Naan
- Mash sweet potatoes in a pot on low heat
- Once completely smooth add cream cheese, garlic powder, and optional spices
- Mix until smooth and creamy
- Remove pot from heat and allow mixture to cool for a few minutes
- Grill naan on stovetop for a few minutes to your desired amount of crispness
- Remove from heat and top with half of sweet potato mixture
- Top with half of steamed kale, goat cheese, and walnuts
- Repeat layering process for second pizza
- Cut and serve
