Vegetarian lettuce wraps made with pan roasted mushrooms, zucchini, crumbled tofu, red and yellow bell peppers, cashews, ginger and cilantro…all wrapped up in that good old Boston lettuce. Best thing is that this is a one pot meal! People always ask me for advice on tofu. Here’s a tip – always buy EXTRA FIRM! Many tend to be a little mushy and fall apart but the best brand I have found so far is from Trader Joes. They sell this high protein super firm organic tofu that has great texture and has practically double the amount protein than average tofu. Haven’t found anything else like it.
